Layers of creamy goodness, rich cacao, and coffee-soaked shortbread come together to create the PERFECT balance of indulgence and nourishment.This is the perfect Christmas dessert that's going to hit that sweet spot in the afternoon. It never gets old.
INGREDIENTS YOU WILL NEED:
Chocolate layers:
- 100g Cacao Collective ceremonial cacao paste
- 2 tbsp coconut oil
- 2 tbsp maple syrup
- 1 tsp vanilla extract
Shortbread Center
- 6-8 clean shortbread biscuits (or make your own!)
- 1/2 cup strong brewed coffee (cooled)
- 1 tbsp coffee liqueur (optional)
Cream Layer
- 1/2 cup raw, unpasteurised cream (or coconut cream)
- 1 tbsp maple syrup
- 1/2 tsp vanilla extract
METHOD:
- Chocolate layers: Melt cacao paste and coconut oil, stir in maple syrup and vanilla. Cool slightly.
- Shortbread: Dip biscuits in coffee (and liqueur if using), then set aside.
- Cream Layer: Whip cream with maple syrup and vanilla until fluffy. Chill.
- Assemble: Pour half the chocolate into a lined loaf pan; freeze 5-10 mins. Add soaked shortbread, then whipped cream. Cover with remaining chocolate.
- Freeze for 20-30 mins, then slice into bars.
- Store in the fridge or freezer for an easy, indulgent and festive dessert!
